About Jimmy's Kitchen in No 39/1, St Marks Road, Bangalore

Kaya's origin is credited to the Hainanese in South East Asia back in the 50s. Many Hainanese worked on British ships as kitchen hands. When they settled in the British colonies now constituting Singapore and Malaysia, they started selling the foods which they prepared for the British, including coffee, toast, and French toast, to the local populations. They replaced the Western jams and preserves favoured by the British with native coconut jams.

It is a sweet and creamy coconut spread, a fruit curd made from a base of coconut milk, eggs and caramelised sugar.

As a popular breakfast staple, kaya is typically spread on toast to make kaya toast and eaten in the morning but also commonly enjoyed throughout the day.
